The BEST Roast Chicken

This chicken is SO good, that I have no pictures of it. But I will keep trying to get that elusive shot of the perfect bird before the greedy people come in. (unfortunately, my husband is both an expert bird photographer, and a greedy person. Conflict of interest.)

Just follow as is, definitely truss the bird, but I'm not sure about the comment about fighting for the chicken butt....
Have not served it with mustard, but the chicken is ALWAYS finished with fingers, not cutlery.
